Yakitori Chicken Fried Rice  (Costco Favorite!)

cooked rice chicken thighs or breast soy sauce mirin cooking oil garlic frozen mixed vegetables green onion sesame seeds

Marinate the Chicken: In a bowl, combine the chicken pieces with soy sauce and mirin. Let it marinate for at least 15 minutes.

Cook the Chicken: Add the marinated chicken to skillet over med-high heat and cook until golden brown and cooked through. Remove and set aside.

Sauté the Vegetables: In the same skillet, add oil, garlic, and frozen mixed vegetables. Cook until the vegetables are heated through.

Combine and stir: Add cooked rice,  soy sauce and mirin, mixing well. Then return the cooked chicken to the skillet and stir it all together.

Finishing touches: Garnish with chopped green onions and sesame seeds if desired. Serve hot and enjoy!

Optional meal prep: Store in an airtight containers in the refrigerator. Add a fresh fried egg for a quick weekday addition!
