In a non-stick frying pan, heat the olive oil over medium heat; you want this to be hot and sizzling.
Crack the eggs directly into the frying pan and cook until the edge of the egg white begins to crisp up, about 1 minute. Sprinkle the shredded cheese evenly over the top of the eggs and add a pinch of montreal steak seasoning.
Carefully flip eggs to the other side, yolk/cheese side down and continue to cook 45 seconds to 1 minute. Serve immediately and garnish with fresh sprouts or herbs, if desired.
