Crispy, cheesy toasted ravioli with a festive St. Patrick’s day twist. This air fryer shamrock toasted ravioli lunch is easy to make and a fun and delicious way to celebrate the luck of the Irish!

Ingredients
1packagefresh or frozen (shamrock) ravioli
1cuppanko bread crumbs
2-3dropsnatural green food coloring
1/4cupparmesan cheese
1tspdried oregano
1tspItalian seasoning
salt and pepper, to taste
1largeegg
1tspwater
fresh fruit, optional for lunchbox
preferred sweet treat, optional for lunchbox
Instructions
Make green bread crumbs; place 1 cup panko or homemade breadcrumbs in a blender along with a few drops of green food coloring. Pulse into color is mixed through.
Bring a large pot of water to a boil and cook ravioli for 3 minutes; drain and remove onto a plate.
Set aside two dishes; in one dish combine breadcrumbs, parmesan cheese, oregano, Italian seasoning, salt and pepper. In the other dish mix egg and 1 tsp water.
Dip ravioli into the breadcrumbs mixture then into the egg and then back into the breadcrumbs. Place on air fryer basket and lightly spray with avocado oil.
Air fry at 370 degrees for 4 mins, flip and repeat on the other side. Serve with marinara sauce, if desired.
Serve with fresh fruit and preferred sweet treat for complete lunchbox, optional.
