2tbspolive oil, divided

1red bell pepper, finely diced
for coconut rice
1cupjasmine rice
1cupcoconut milk
1cupwater
2tbspfresh cilantro leaves, finely chopped

for the bowls - pick your preferred toppings
2cupsarugula
½cupshredded carrots
½cupcherry tomatoes, halved
½cupcucumber, cut into rounds

Instructions
Prepare the shrimp: In a medium sized bowl, combine the shrimp with 1 tablespoon olive oil, lime juice, smoked paprika, garlic powder, salt and pepper to taste.
Cook the shrimp: In a skillet heat 1 tablespoon olive oil over medium-high heat. Add the minced garlic and sauté for 1-2 seconds; add in diced red pepper and sauté 2-3 minutes, until softened. Add the marinated shrimp to the skillet and cook for about 2-3 minutes per side until they turn pink and opaque. Set skillet aside.
Cook the coconut rice: In a saucepan, combine the jasmine rice, coconut milk, water, and salt. Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and fluffy. Stir in the freshly chopped cilantro leaves and lime juice.
Prepare the coconut lime dressing: Into a blender mix the coconut milk, lime juice, honey, chopped cilantro; season with salt and pepper to taste and set aside.
Assemble the bowls: Divide the coconut rice and shrimp mixture into 4 bowls. Top each bowl with your choice of toppings. Drizzle over the coconut lime dressing and serve with fresh lime wedges if desired. Enjoy!
