2tbspolive oil or unsalted butter
1mediumonion, finely diced
2mediumcarrots, peeled and diced
2stalkscelery, diced
3-4clovesgarlic , minced
8cupschicken stock, homemade or low-sodium
2bay leaves
1tspdried thyme, or 2 sprigs fresh thyme
salt and pepper, adjust to taste
2cupscooked chicken (rotisserie), shredded
1cupstelline, star-shaped pasta
2tbspfresh parsley, chopped
Juice of ½ lemon, optional, for brightness
Instructions
Sauté the veggies: In a large pot, heat olive oil or butter over medium heat. Add onion, carrots, and celery. Cook for 6–7 minutes until softened. Add garlic and cook for another minute.
Build the broth: Pour in chicken stock, then add bay leaves, thyme, salt, and pepper. Bring to a boil, then reduce to a simmer for 20 minutes.
Add chicken and pasta: Stir in shredded chicken and star pasta. Simmer until the pasta is tender (about 6–8 minutes).
