One Pan Jerk Chicken Pasta is creamy pasta tossed with Caribbean style jerk chicken and sautéed vegetables. This dish is incredibly delicious and easy to make. It all comes together in one pan in just under 30 minutes for a great weeknight dinner!
Marinate the Chicken: Rub the chicken breasts with 2 tbsp jerk seasoning, olive oil, and lime juice.
Cook the Chicken: Heat a large skillet over medium-high heat. Cook the chicken for about 5-6 minutes per side, until browned and mostly cooked through. Remove for the skillet and let them rest for a few minutes before slicing into strips.
Sauté the Vegetables: In the same pan, add the sliced bell peppers, red onion, minced garlic and 1 tbsp of the jerk seasoning. Sauté for 3-4 minutes, or until the vegetables are tender.
Create the Sauce: Add the chicken broth and heavy cream to the pan, stirring to combine. Bring the mixture to a simmer.
Cook the Pasta: Add the uncooked pasta to the pan, stirring it into the liquid. Cover the pan with a lid and let it simmer for about 10-12 minutes, stirring occasionally, until the pasta is cooked to al dente. If the liquid reduces too much before the pasta is fully cooked, you can add a little extra chicken broth or water.
Combine Everything: Once the pasta is cooked, return the chicken to the pan along with any juices that have accumulated. Add the parmesan cheese and stir until well combined and the cheese is melted into the sauce.
Season: Taste and adjust the seasoning with more salt, pepper and/or jerk seasoning to taste.
Garnish and Serve: Remove from heat and sprinkle with sliced green onions and freshly chopped cilantro if desired.
