Ingredients
14ozspaghetti
1tbspolive oil
1mediumonion, thinly sliced
1greenbell pepper, thinly sliced
3.5ozmushrooms, sliced
2-3chicken sausages, sliced (or any cooked sausage including hotdogs)
3garlic cloves, minced
½cupketchup
2tbsptomato paste , optional, for richer flavor
1tbspWorcestershire sauce
1tspsoy sauce
1-2tspbrown sugar , to taste
2tbspbutter
eggs , optional, for frying
fresh sliced green onions, optional for serving
Instructions
Cook the Pasta: Boil spaghetti in salted water according to package instructions. Drain and set aside.
Sauté the Veggies & Sausage: In a large skillet, heat olive oil over medium heat. Add onions and sauté until soft. Add bell pepper, mushrooms, and sliced chicken sausage. Cook until veggies are tender and sausage is browned.
Make the Sauce: Add minced garlic and cook for 1 minute. Stir in ketchup, tomato paste, Worcestershire sauce, soy sauce, and sugar. Simmer for 2–3 minutes.
Combine: Toss in the cooked spaghetti and butter. Mix until everything is evenly coated and glossy. Season with salt and pepper to taste.
Fry the Eggs (Optional): In a separate pan, fry eggs to your liking.
Serve: Plate the spaghetti, top with a fried egg, sprinkle with fresh green onions. Enjoy!
