Ingredients
1lbground beef or turkey
1cupuncooked rice (white or brown)
3bell peppers (any color), diced
1mediumonion, chopped
3-4garlic cloves, minced
1canRotel, diced tomatoes and green chilies, with juice
1cuptomato sauce
1cupshredded mozzarella or cheddar cheese
1cupbeef or chicken broth

2tspitalian seasoning
salt and pepper , to taste
parsley or cilantro , optional, for garnish
Instructions
Cook the Meat: In a large skillet over medium-high heat, cook the ground beef or turkey until browned. Break it into crumbles as it cooks. Drain any excess fat if necessary.
Add in the Veggies: Add the diced bell peppers, chopped onion, and minced garlic to the skillet. Sauté for about 3-4 minutes until the vegetables start to soften.
Combine the Rice and Seasonings: Mix in the uncooked rice, canned tomatoes and green chilies (with juice), tomato sauce, broth, and Italian seasoning; season with salt and pepper to taste.
Cook the Rice: Bring the mixture to a simmer. Once it’s simmering, cover and cook for about 20 minutes, or until the rice is cooked through and has absorbed most of the liquid.
Add Cheese: Remove the lid and stir in the cheese until melted and creamy.
