Ingredients
2bread slices
2-3tbspbutter, melted
2eggs
salt and pepper, to taste
Instructions
Using a food cutter or the bottom of a small drinking glass, cut out the centers of bread slices. Reserve the center cut-outs.
Heat a skillet over medium heat. Brush on the melted butter to both sides of the toast.
Add the buttered bread slices and the cut-outs to the hot skillet. Cook until the bread is toasted an light golden-brown on the bottom, 1-2 minutes.
Flip the bread slices and cut-outs using a spatula. Crack 1 egg into each hole. Season with salt and pepper to taste.
Cover the pan and cook until the egg whites are fully set, the yolk is still runny, and the other side of the bread is golden-brown, about 3-4 minutes. (For hard-cooked egg yolks, you will want to cook for 4-5 minutes). Serve immediately.
