4cupssweet corn kernels, fresh, frozen, or canned; if frozen, thaw first
½stickbutter
8ozcream cheese, cut into cubes
½cupcream, or half-and-half
1tspsmoked paprika, optional but adds great flavor
salt and pepper, to taste
Instructions
Melt the butter: In a large skillet, melt the butter over medium heat.
Add the corn: Stir in the corn and cook for 3–4 minutes until heated through.
Add cream cheese: Lower the heat and stir in the cream cheese cubes until melted and smooth.
Add cream and seasonings: Pour in the cream, smoked paprika (if using), salt, and pepper to taste. Stir until creamy and well combined.
