Ingredients
4fish fillets, such as halibut, mahi mahi, salmon, cod, or sea bass
Preheat your oven to 400 degrees F. Prepare foil packets; cut 4 pieces of aluminum foil, about 12 inches each and place into bowls to make folding easier.
Place a fish fillet in the middle of each bowl.
Sprinkle over each fillet with greek seasoning, salt and pepper to taste. Evenly distribute the onion, cherry tomatoes, capers, olives, garlic, and parsley. Drizzle over olive oil and lemon juice into each packet. Top each fillet with a lemon round.
Fold the packets and close them, covering the fish fillets well.
Place foil packets on a baking sheet and cook 20-25 minutes.
