Ingredients
for the salmon and corn
4salmon fillets
16ozcorn (about 3-4 ears), fresh, frozen, or canned corn works
2tbspolive oil
2tbsporange juice
2tbsphoney
1½tspgarlic powder
1tspground cumin
1tspsmoked paprika
salt and pepper, to taste
for the peach avocado salsa
2-3smallpeaches, diced
2avocados, diced
2tbspcilantro, finely diced
¼cupred onion, finely diced
1jalapeño, seeded and diced
2limes, juiced
salt and pepper, to taste
Instructions
Preheat your oven to 400 degrees. Make your glaze for the salmon and corn: In a small bowl whisk together olive oil, orange juice, honey, garlic powder, cumin, smoked paprika, salt, and pepper to taste.
Place the salmon fillets skin side down and corn onto a large baking sheet lined with parchment paper. Brush the glaze onto the fillets; drizzle the remaining glaze over the corn. Bale for 15-20 minutes or until salmon easily flakes with fork and corn is tender.
While the salmon and corn are in the oven, make your peach avocado salsa. Add peaches, avocado, cilantro, red onion, jalapeño, and lime juice to a medium sized bowl and mix until well combined. Season with salt and pepper to taste.
Top the salmon with the peach avocado salsa and combine it with the corn. Serve immediately.
