Ingredients
4salmon fillets
1pintcherry tomatoes, halved
½cupkalamata olives, pitted
4-5garlic cloves, minced
¼cupolive oil
1lemon, sliced
½cupcrumbled feta cheese
2cups arugula, optional, for serving
Instructions
Preheat your oven to 400 degrees F.
In a bowl, mix together the cherry tomatoes, kalamata olives, minced garlic, and olive oil. Season with salt and pepper.
Place the salmon fillets on a large sheet pan lined with parchment paper. Season the salmon with salt and pepper and drizzle over olive oil on top.
Arrange the tomato and olive mixture around the salmon on the sheet pan. Place lemon slices on top of the salmon.
Roast in the preheated oven for about 20 minutes, or until the salmon is cooked through and flakes easily with a fork.
Once cooked, sprinkle the crumbled feta cheese over the salmon and vegetables.
Serve the salmon and vegetables over a bed of fresh arugula, if desired.
