Ingredients
for the pie crust
1¼cupsall-purpose flour
¼tspsalt
½cupunsalted butter, cold and cut into small pieces
4tbspice cold water
for the quiche egg filling
3largeeggs
1½cupswhole milk
½cupcream
¼tspnutmeg
salt and pepper, to taste
Instructions
Preheat oven to 375 degrees F.
In a large mixing bowl, combine the flour and salt. Add the cold butter and use a pastry cutter or fork to mix until the mixture resembles coarse sand.
Gradually add the ice cold water, one tablespoon at a time, whole mixing with a fork or pastry blender until the dough comes together in a ball.
Roll out the dough to fit a 9-inch quiche pan. Trim the edges and prick the bottom of the crust with a fork. Bake or 10 minutes.
In a medium mixing bowl, mix together the eggs, milk, cream, nutmeg, salt, and pepper until smooth. Whisk in add-ins and then pour into crust.
Bake for 35-40 minutes, or until the top of the quiche is lightly golden brown and the center is set. Allow the quiche to cool 10-15 minutes before slicing and serving.
