Into a large non-stick skillet or wok, add sesame oil, diced red pepper, and cook over medium-high heat for 1-2 minutes, adding in the peas, carrots, and corn; cook for about 2-3 minutes, or until vegetables begin to soften, stirring frequently.
Add in the garlic, ginger, salt, pepper, and cook until fragrant.
Push the vegetables to one side of the skillet, adding in the eggs to the other side; cook until eggs are scrambled.
Add the shrimp and rice to the pan. Evenly distribute the soy sauce over the pan and stir to combine.
Cook 3-5 minutes, until shrimp is heated through. Garnish with green onion if desired.
