Toasted Garlic Ranch Chicken Fried Rice is a game-changer for busy families who want a quick, high-protein meal that everyone will love. Made with Maya Kaimal’s Toasted Garlic Fried Rice, ground chicken (or your protein of choice), and a zesty ranch seasoning packet, this dish is bursting with flavor and super easy to prepare. As a busy mom and teacher, I’ve found this recipe perfect for school lunches and weeknight dinners—especially with my growing children who can’t get enough of it!
Prepare the Fried Rice according to the package directions. After cooking, spread it on a sheet pan or large plate and let it cool 10-15 minutes (this helps it separate and fry better).
Brown the Ground Chicken
Heat 1-2 TBSP sesame oil in a large skillet or wok over medium-high heat. Add ground chicken, season with black pepper, and cook until browned and cooked through, breaking it up as it cooks.
Removed chicken to a plate (or keep it in the pan if there’s enough room).
Saute Aromatics + Veg
Add 1 TBSP sesame oil to the skillet. Add diced onion and garlic; sauté for 2-3 minutes until fragrant and translucent. Add frozen peas/carrots and cook 2-3 minutes until hot. Season with a small pinch of salt if needed.
Scramble Eggs
Push vegetables to the sides of the pan. Add a touch more oil if dry, then pour in beaten eggs. Scramble until just set, then combine with the vegetables.
Add Ranch Seasoning + Chicken
Return browned chicken to the pan. Sprinkle in the Ranch seasoning packet. Stir well so the chicken and vegetables pick up the flavor and slightly “hydrate” the mix.
Fry the Rice
Add the cooled Ready Fried Rice to the skillet. Drizzle in 1-2 TBSP soy sauce and toss to coat. Cook 2-4 minutes, tossing frequently, until you get some lightly browned bits.
Adjust Texture and Finish
Taste and adjust:
if it’s too dry: add 1-2 TBSP water/chicken broth and toss
if it needs more punch: add another 1-2 TBSP soy sauce. Optional: add 1 tsp sesame oil right at the end.
