Protein-packed cottage Cheese Stuffed Peppers

large bell peppers olive oil small red onion ground beef dried oregano garlic powder cooked rice canned diced tomatoes cottage cheese

Step One:  Place the peppers, cut side up, into a baking dish, drizzle with olive oil, and roast for 20 minutes, until slightly browned around the edges and tender-crisp.

While peppers are roasting: Cook the onion and ground beef with seasonings in a skillet until browned and almost cooked through, 4 to 5 minutes.

Mix together cooked ground beef mixture, cooked rice, diced tomatoes, cottage cheese, and cheddar cheese.

Stuff the peppers: Remove the peppers from the oven and spoon the filling evenly into the peppers. Sprinkle over chopped green onion and cheddar cheese, if desired.

Bake: Place the peppers back in the oven and roast 10-15 minutes, until the filling is hot and the cheese is melted.

Serve: Let cool slightly before serving. Garnish with extra green onion, if desired; Enjoy!
