Easy  Tuscan chicken (no dairy!)

Cook the chicken: Season chicken breasts with salt, pepper, and smoked paprika, then add to the skillet and cook until golden on both sides, about 4-5 minutes per side. Remove chicken from skillet and set aside.

In the same skillet, cook the onion, garlic, and herbs until tender. and fragrant.

Make the tuscan sauce: Deglaze the pan with broth, and add chopped sun-dried tomatoes and coconut milk. Stir.

Add fresh spinach to the tuscan sauce and mix together, cooking just until it wilts.

Return the chicken to the skillet and spoon the sauce over the chicken.

Serve over pasta, if desired. Enjoy!
