Quinoa & Celery Salad Costco Copycat Recipe

quinoa chickpeas celery cherry tomatoes cucumber red onion kale fresh parsley dried cranberries slivered almonds

apple cider vinegar dijon mustard honey olive oil salt and pepper

Step One: Chop vegetables and cook quinoa according to package instructions. Once quinoa is cooked, drain any excess water and let it cool.

Prepare the dressing:  Whisk together the apple cider vinegar, dijon mustard, honey, salt & pepper. Gradually add the olive oil while whisking continuously until emulsified.

Assemble the salad:  Combine cooled quinoa with chickpeas, chopped vegetables, kale, and parsley. Pour the vinaigrette over the salad and toss. Season with salt and pepper.

Add Toppings:  Sprinkle the toasted almonds and dried cranberries over the top just before serving for extra crunch and texture.

Mix it all together:  Serve chilled or at room temperature; it can be a great side dish or a light main course.

Add your protein:  Try serving this salad with seared salmon or grilled chicken for an extra punch of protein!
