This amazing banana crunch french toast dish has become a weekend favorite in our household. Crispy granola and sweet bananas elevates a traditional french toast and is incredibly easy to make a gourmet breakfast at home.

Ingredients
1banana, peeled and thinly sliced, plus extra for serving
1cupgranola, plus extra for serving
½cupmilk, any type you prefer
3large eggs
1tspground cinnamon
4sliceswhite bread
butter or oil for cooking
maple syrup, powdered sugar, whipped cream, or honey , optional for serving
Instructions
In a large bowl combine and mix together banana slices, granola, eggs, milk, and ground cinnamon
Preheat a non-stick skillet over medium heat and add a small amount of butter or oil to coat the surface.
Dip a slice of bread into the egg mixture, ensuring both sides are fully coated. Let any excess batter drip off.
When skillet is very hot, place the coated bread onto the skillet. Pour about 3 tbsp of the batter (including banana slices and granola) over the top of the bread slice. Cook about 2 minutes on each side, or until golden brown and crispy.
Repeat the coating and cooking process with the remaining slices of bread.
Once all the french toast slices are cooked, serve them warm, topped with fresh banana slices and additional granola. Drizzle with maple syrup, honey, or a sprinkle of powered sugar if desired.
