Ingredients
1cupcottage cheese
2largeeggs
¼cupmilk
¼cupbrown sugar
½cupflour
1tspbaking soda
1tsp vanilla extract
oil or butter , for greasing the skillet pan
optional add-ins , such as banana, strawberries, blueberries, and/or chocolate chips
Instructions
Into a large mixing bowl, whisk together cottage cheese, eggs, milk, brown sugar, and vanilla extract until fully combined.
Slowly add in the flour and baking soda and mix until well combined. Fold-in your add-in if using.
Heat a non-stick skillet over medium heat and lightly coat with olive oil or butter.
Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.
