To make this protein packed brown sugar pancakes recipe, you’ll need a few ingredients that you can get at almost any grocery store or even online!
Here’s what we are working with:
- cottage cheese
- brown sugar
- flour – for an extra punch of protein and ease, you can use a pancake mix and forgo the flour and baking soda.
- baking soda
- milk
- egg
- vanilla extract
- add-ins – completely optional. My kids love their protein pancakes with banana, other ideas are to add in are strawberries, blueberries, and/or chocolate chips.

Into a large mixing bowl, whisk together cottage cheese, eggs, brown sugar, and vanilla extract until fully combined. Slowly add in the dry ingredients (flour and baking soda) and add-in, if using until well combined.

Heat a non-stick skillet over medium heat and lightly coat with olive oil or butter. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

- optional add-ins , such as banana, strawberries, blueberries, and/or chocolate chips
Instructions
