These delicious high protein cottage cheese pancakes are fluffy, moist, and sweetened with brown sugar. They are easy to make, only require a few ingredients, and ready to go in no time.

As a busy mom juggling work, household chores, and family time, weekends are a precious opportunity to slow down and savor moments with my loved ones. One of our favorite weekend traditions is gathering around the breakfast table for a cozy and delicious meal.

This simple recipe for cottage cheese and brown sugar protein pancakes has become a staple in our home. There’s something magical about the smell of pancakes sizzling on the griddle and the warmth and comfort it brings to the home.

To make this protein packed brown sugar pancakes recipe, you’ll need a few ingredients that you can get at almost any grocery store or even online!

Here’s what we are working with:

  • cottage cheese
  • brown sugar
  • flour – for an extra punch of protein and ease, you can use a pancake mix and forgo the flour and baking soda.
  • baking soda
  • milk
  • egg
  • vanilla extract
  • add-ins – completely optional. My kids love their protein pancakes with banana, other ideas are to add in are strawberries, blueberries, and/or chocolate chips.

how to make cottage cheese and brown sugar protein pancakes

Into a large mixing bowl, whisk together cottage cheese, eggs, brown sugar, and vanilla extract until fully combined. Slowly add in the dry ingredients (flour and baking soda) and add-in, if using until well combined.

Heat a non-stick skillet over medium heat and lightly coat with olive oil or butter. Pour 1/4 cup of the batter onto the skillet for each pancake. Cook until bubbles form on the surface of the pancake, then flip and cook for another 1-2 minutes until golden brown. Repeat with the remaining batter.

Serve the pancakes warm with your favorite toppings. Enjoy!

Ingredients 

  • 1 cup cottage cheese
  • 2 large eggs
  • ¼ cup milk
  • ¼ cup brown sugar
  • ½ cup flour
  • 1 tsp baking soda
  • 1 tsp vanilla extract
  • oil or butter , for greasing the skillet pan
  • optional add-ins , such as banana, strawberries, blueberries, and/or chocolate chips

Instructions
