Ingredients
116 oz packagegnocchi, cooked according to package instructions
In a large pot of boiling salted water, cook gnocchi according to package instructions; drain well. If using frozen peas, take out of freezer to thaw.
In a deep skillet, over medium-high heat, cook the bacon until it’s crispy; about 10 mins. Once the bacon is done cooking, use a slotted spoon to remove it from the pan and set aside. Be sure to swirl the remaining bacon fat in the pan, discard it, leaving what sticks to the pan; about 1 tbsp reserved for cooking the chicken.
While bacon is cooking, prep chicken; butterfly and halve two large chicken breasts to make 4 pieces of thin chicken cutlets and season with salt and pepper on both sides.
Add the chicken to the pan with bacon renderings and cook over medium heat for about 3-4 minutes per side, until golden brown and cooked through; set aside.
Add diced onion to the pan, and cook, stirring frequently, until translucent, about 2-3 minutes. Stir in garlic, until fragrant. Whisk in chicken broth, stirring frequently and reduce by half.
Mix in cream, parmesan cheese, and peas; give a good stir. Let simmer for 6-8 minutes.
Add the cooked bacon and gnocchi to the skillet; stir to combine. Nestle in the chicken breasts and top with additional parmesan cheese, if desired. Enjoy!
