Creamy Bacon Chicken with Peas Gnocchi

It’s the ultimate comfort food – rich and creamy, yet not so over the top; the kind that soothes your soul and allows you to still go back for more. The kind of food that keeps you yearning. This creamy gnocchi is put on full blast with juicy, tender chicken cooked in bacon renderings and then topped with sweet peas.
I don’t know what it is about gnocchi, but I’ve been craving it all the time lately. It’s hard not to when you know that a sweet little pillow of happiness exists in this world.
This recipe is made with potato gnocchi; a perfect mix of dumpling and pasta. I know that Trader Joe’s offers a cauliflower gnocchi which has me equally intrigued. Oh, the options are endless here!

And that’s just it. Gnocchi also pairs so well with anything. It’s like that go-to friend that you know will will always pick you up. I am content to eat gnocchi with a warm brown butter sauce because it truly doesn’t need much, BUT this recipe right here, ya’ll is gnocchi heaven!
Creamy, dreamy, garlicky, comforting gnocchi accompanied by some serious all-stars in their own right makes this one hard to beat!

This all deserves some serious extra credit because you want to know the best part?? It’s all made in one skillet! And that alone makes me 1,000% IN…YES…SIGN ME UP!

Ingredients for Creamy Bacon Chicken with Peas Gnocchi
To make this easy one pan creamy bacon chicken with peas gnocchi, you’ll need a few ingredients that you can get at almost any grocery store or even online.
Here’s what we are working with:
- potato or cauliflower gnocchi
- 6 strips of thick bacon
- chicken breasts – butterflied and halved
- salt and pepper
- shallot
- garlic cloves
- chicken broth
- heavy cream
- grated parmesan cheese
- peas – fresh or frozen and thawed

How to Make Creamy Bacon Chicken with Peas Gnocchi
- In a large pot of boiling salted water, cook gnocchi according to package instructions; drain well. If using frozen peas, take out of freezer to thaw.
- In a deep skillet, over medium-high heat, cook the bacon until it’s crispy (about 10 mins). While bacon is cooking, prep chicken; butterfly and halve two large chicken breasts to make 4 pieces of thin chicken cutlets and season with salt and pepper on both sides.
- Once the bacon is done cooking, use a slotted spoon to remove it from the pan and set aside.
- Add the chicken to the pan and cook about 3-4 minutes per side, until golden brown and cooked through; set aside.
- Swirl the remaining bacon fat in the pan, discard it, leaving only what sticks to the pan.
- Add diced shallot to the pan, and cook, stirring frequently, until translucent, about 3-5 minutes. Stir in garlic, until fragrant. Whisk in chicken broth, stirring frequently and reduce by half.
- Mix in cream; reduce by another half. Stir in parmesan cheese until fully combined.
- Add the peas into the pan along with the cooked bacon, give a good stir. Stir in gnocchi and return chicken to the skillet.
