These chicken meatballs are baked to perfection and smothered in an easy to make lemon garlicky white wine cream sauce. Bursting with fresh and delicious flavors, these delicious chicken meatballs make an easy busy weeknight dinner or meal prep option.

Ingredients
for the meatballs
1½lbground chicken
2garlic cloves, minced
¼fresh parsley, finely chopped
zest of ½ lemon
¼cupgrated parmesan
½cupseasoned panko bread crumbs
1egg
1tsponion powder
salt and pepper, to taste
for the white wine sauce
1tbspolive oil
3garlic cloves, minced
1tbsparrowroot powder , or flour
1cupwhite wine, or chicken broth
¼cupchicken stock
juice from ½ lemon
1tbspgreek yogurt
Instructions
Preheat oven to 425 degrees
Combine all ingredients in a bowl and mix gently. Use a cookie scoop or tablespoon to roll into 1.5-inch balls and place on a lightly oiled baking sheet.
Cook for 18-20 minutes until nicely browned, flipping halfway.
Heat olive oil over high heat. Add the minced garlic and sauté for 1-2 seconds; add in the arrowroot powder or flour and mix well to coat the garlic. Add in the white wine, chicken stock and lemon juice; stir until the mixture is smooth.
Add the Greek yogurt and season with salt and pepper to taste; stir well and let simmer for an additional 5 minutes.
Pour sauce over meatballs and serve with pasta and green beans if using.
