Easy creamy chicken caesar risotto is the ultimate comfort food dish made in a single pan. Ingredients
2tbspolive oil
1lbboneless, skinless chicken breasts, cut into bite-sized pieces
salt and pepper, to taste
1small onion, finely chopped
3garlic cloves, minced
1½cupsArborio rice “Risotto”
½cupwhite wine (optional), or water
4cupschicken broth, warmed
½cupgrated parmesan cheese, plus extra for serving
¼cupCaesar dressing
1lemon, juiced
1tspdijon mustard
1tspworcestershire sauce
3tbspfresh parsley, chopped
¼cupcroutons, for topping
Instructions
Marinate and Cook the Chicken: Into a bowl, place the bite size chicken pieces and coat with olive oil; season with salt and pepper to taste. Heat a large pan, once very hot, cook the chicken until golden on both sides. Remove and set aside.
Sauté Onion and Garlic: In the same pan, cook onion until translucent, then add garlic.
Toast the Rice: Add risotto, stirring to coat in oil, and cook until edges are translucent.
Deglaze the Pan: Pour in white wine (if using) and stir until absorbed.
Cook the Risotto: Gradually add warm chicken broth, one ladle at a time, stirring frequently until rice is creamy and al dente, about 16-18 minutes.
Finish the Risotto: Stir in Parmesan, Caesar dressing, lemon juice, Dijon mustard, and Worcestershire sauce.
Combine: Return chicken to the pan, stir in parsley, and mix well.
Serve: Top with croutons and additional Parmesan cheese.
