This easy and delicious hot honey chopped salad is packed with fresh vegetables, plant powered protein, and unbelievably yummy sweet and spicy vinaigrette to top. Every holiday season, this vibrant salad finds its place on our table.

Ingredients
for the salad
8ozfrozen edamame, cooked
1(15 oz) cancorn , fresh or frozen works too
3-4sweet peppers, any color, chopped
1jalapeno pepper, ribs and seeds removed, diced
1smallred onion, chopped
1cupcherry tomatoes, halved
1avocado, diced
1cupgarlic stuffed green olives, sliced
1cupcrumbled feta or queso fresco
2tbspfresh cilantro or parsley
for the vinaigrette
¼apple cider vinegar
2tspcrushed or ground red pepper, more for heat
1tbsphoney , more for sweetness
1lime , juiced
½olive oil
salt and pepper, to taste
Instructions
Chop vegetables and cook edamame according to package instructions; let it cool completely.
In a large bowl, combine all salad ingredients and season with salt and pepper to taste.
Prepare the dressing: In a small bowl or jar with a lid, combine the apple cider vinegar, crushed or ground red pepper, honey, lime juice, salt, and pepper to taste. Whisk or shake until well combined. Gradually add the olive oil while whisking continuously (or shaking) until the dressing is emulsified.
Assemble the salad: Combine the cooled edamame with the other salad ingredients. Pour the vinaigrette over the salad and toss gently to combine. Season with salt and pepper to taste.
Serve: Serve the salad chilled or at room temperature; it can be a great side dish or a light main course. Enjoy!
