This lasagna recipe is rich with creamy mascarpone cheese, sweet Italian sausage, cherry tomatoes and spinach for a hearty sauce that all comes together in one pan. There is no boiling or layering. It’s the easiest 30 minute lasagna you will ever make in a single pot!

Instructions
Heat olive oil in a large pot over medium heat. Add ground beef and sweet Italian sausage and cook until browned, about 3-5 minutes; drain excess fat.
Add in diced red onion, spinach, cherry tomatoes, pasta sauce, garlic powder, oregano, and Italian seasoning; season with salt and pepper to taste. Mix well.
Bring to a simmer, add in lasagna sheets (broken in half) and 2 cups water or chicken broth. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
While pasta cooks, in a medium bowl combine mascarpone cheese, parmesan cheese and 1 egg. Mix well and season with salt and pepper to taste.
Turn-off heat. Stir in mozzarella cheese until well combined. Using a small ice cream scoop, top with dollops of the mascarpone mixture and cover until heated through, about 3-5 minutes.
Serve immediately, garnish with additional Italian seasoning and parsley, if desired.
