This easy lasagna recipe is rich with creamy mascarpone cheese, sweet Italian sausage, cherry tomatoes and spinach for a hearty sauce that all comes together in one pan. There is no boiling or layering. It’s the easiest 30 minute lasagna you will ever make in a single pot!

I dream of making lasagna all the time. After all, lasagna is one of the most delicious, classic Italian dishes. However, If I’m being completely honest, lasagna kind of intimidates me. The layering, the steps; oh the steps! It becomes a process and honestly these days, who really has time for any of this!?

That’s why this one pot mascarpone lasagna recipe is so amazing – it’s quick, easy and requires only one pot!

Ingredients for Easy One Pot Mascarpone Lasagna

To make this easy one pot lasagna, you’ll need a few ingredients that you can get at almost any grocery store or even online. You may already have a number of these ingredients on hand. You can make a number of substitutions with this recipe. For example, you can use fresh or canned spinach, risotto or mascarpone cheese, or choose to make this dish sans meat. This is an extremely flexible recipe which gives it extra bonus points!

How to Make Easy One Pot Mascarpone Lasagna

  1. Heat olive oil in a large pot over medium heat. Add ground beef and sweet Italian sausage and cook until browned, about 3-5 minutes; drain excess fat.
  2. Add in diced red onion, spinach, cherry tomatoes, pasta sauce, garlic powder, oregano, and Italian seasoning; season with salt and pepper to taste. Mix well.
  3. Bring to a simmer, add in halved lasagna noodles and 2 cups water or chicken broth. Bring to a boil; cover, reduce heat and simmer until pasta is cooked through, about 12-14 minutes.
  4. While pasta cooks, in a medium bowl combine mascarpone cheese, parmesan cheese and 1 egg. Mix well and season with salt and pepper to taste.
  5. Turn-off heat. Stir in mozzarella cheese until well combined. Using a small ice cream scoop, top with dollops of the mascarpone mixture and cover until heated through, about 3-5 minutes.

  • While pasta cooks, in a medium bowl combine mascarpone cheese, parmesan cheese and 1 egg. Mix well and season with salt and pepper to taste.
  • Turn-off heat. Stir in mozzarella cheese until well combined. Using a small ice cream scoop, top with dollops of the mascarpone mixture and cover until heated through, about 3-5 minutes.
  • Serve immediately, garnish with additional Italian seasoning and parsley, if desired.
