Ingredients
3-4sweet potatoes, peeled and cut into 1/4-inch rounds
1tbspolive oil
1½tspground cumin, divided
1½tspsmoked paprika, divided
1tspchili powder, divided
salt and pepper to taste
1lbground beef
1small red onion, diced
1red bell pepper, diced
2-3garlic cloves, minced
¼cuphot honey , or regular honey mixed with a pinch of cayenne pepper
1can (15 oz)black beans, drained and rinsed
1cupcorn, fresh, frozen, or canned
1cupshredded cheddar cheese
fresh cilantro, chopped, for garnish
Instructions
Preheat Oven: Preheat your oven to 400°F (200°C).
Prepare Sweet Potatoes: Place the sweet potato rounds in a medium bowl. Mix in 1 tablespoon olive, 1 tsp ground cumin, 1 tsp smoked paprika, 1/2 tsp chili powder; season with salt and pepper to taste so that the sweet potatoes are covered with olive oil and spices. Arrange sweet potato rounds around the sides of a prepared baking dish, overlapping slightly to create a border.
Cook Ground Beef: In a skillet, cook ground beef until browned. Drain excess fat.
Add Vegetables and Spices: Add onion, bell pepper, and garlic to the beef. Stir in the remaining cumin, smoked paprika, chili powder; season with salt and pepper to taste.
Combine and Assemble: Mix in black beans and corn; drizzle half of the hot honey over. Pour into the middle of the baking dish, surrounded by sweet potatoes.
Bake: Drizzle remaining hot honey over sweet potatoes. Cover with foil and bake for 25-30 minutes. Uncover, add cheese, and bake until melted, another 20-25 minutes. Turn on the broiler for 2-3 minutes at the end for a crispy topping.
