Ingredients
1½lbsbrussels sprouts, trimmed and halved
6slicesthick-cut bacon, chopped
2tbspolive oil or reserved bacon fat
1tspgarlic powder
1tspsmoked paprika , (optional)
2tbspbalsamic vinegar
1tbsphoney (or maple syrup)
salt and pepper, to taste
Instructions
Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.
Prep the Brussels sprouts: Trim and halve them, then place them in a food processor. Pulse 2–3 times until slightly shredded but still chunky.
Cook the bacon: In a skillet, cook chopped bacon until it starts to crisp. Remove and set aside, reserving 2 tablespoons of bacon fat.
Toss everything: In a large bowl, combine Brussels sprouts, olive oil (or bacon fat), garlic powder, smoked paprika, salt, and pepper.
Roast: Spread evenly on the baking sheet, cut side down. Roast for 20 minutes.
Add bacon: Sprinkle bacon over the sprouts and roast for another 10–15 minutes until crispy and golden.
Finish with glaze: Whisk together balsamic vinegar and honey, then drizzle over the hot sprouts before serving.
