½cupmini pepperonis, diced, plus extra for topping
¼cupgreen onion, diced, plus extra for serving
1cherry tomato, diced
1cuppizza sauce
fresh fruit, optional for complete lunchbox – I used strawberries and blueberries
Instructions
In a large bowl, whisk together pancake mix, milk and eggs. Add in dried oregano and season with salt and pepper to taste. Stir in ½ cup mozzarella cheese, diced pepperoni, diced tomato, and green onions until well combined.
Heat a non-stick skillet or griddle over medium heat. Spray with cooking spray or melt butter in the skillet.
Pour 1/4 cup of the batter into the skillet and use the bottom of the cup to spread into a circle.
Cook until bubbles form on the surface of the pancake, then flip and cook for 1 more minute.
Spread a tablespoon of pizza sauce on the pancake, sprinkle with shredded mozzarella cheese and top with mini pepperonis. Turn the heat to low or completely off if too hot and cover with a lid, 30 seconds – 1 minute. Just until the cheese is slightly melted.
Remove from the skillet and serve with additional green onions, cheese and/or pizza sauce for dipping. Serve with fresh fruit for a complete lunchbox option.
