As a busy mom and teacher, I know just how challenging it can be to find time to make meals that are both delicious and easy to prepare. That’s why I can’t wait to share with you one of my favorite recipes for quick and easy deliciousness! Pancake pizzas are the real MVP in our house.

These pizza pancakes are the perfect combination of savory and sweet, and guaranteed to satisfy any pizza craving. This recipe is perfect for breakfast, lunch or dinner. It’s a great way to get your pizza fix in without breaking the bank or ordering delivery. Plus, it’s also a fun and creative way to get the kids involved in the kitchen. These pizza pancakes are one of my kids favorite things to make and eat! They devour all this fluffy, cheesy goodness in seconds.

To make this fun and delicious pizza pancakes school lunchbox, you’ll need a few ingredients that you can get at almost any grocery store or even online!

This will make 4 lunchbox containers. I love these 2 compartment food containers that I found on Amazon!

Here’s what we are working with:

how to make savory pizza pancakes

  1. In a large bowl, whisk together pancake mix, milk and eggs. Add in dried oregano and season with salt and pepper to taste. Stir in mozzarella cheese, diced pepperoni, diced tomato, and green onions until well combined.
  2. Heat a non-stick skillet or griddle over medium heat. Spray with cooking spray or melt butter in the skillet.
  3. Pour 1/4 cup of the batter into the skillet and use the bottom of the cup to spread into a circle.
  4. Cook until bubbles form on the surface of the pancake, then flip and cook for 1 more minute.
  5. Spread a tablespoon of pizza sauce on the pancake, sprinkle with shredded mozzarella cheese and top with mini pepperonis. Turn the heat to low and cover with a lid, 30 seconds – 1 minute.
  6. Remove from the skillet and serve with additional green onions, cheese and/or pizza sauce for dipping. Serve with fresh fruit for a complete lunchbox option.

why prep lunches for school?

To make meal planning more consistent and practical in my house, I aim to include four school lunch preps for my two kids in our weekly meal prep rotation. This helps us save money. Additionally, we can ensure that two days of the week, the kids have well balanced meals. Moreover, these lunchboxes are fun and festive, yet simple enough to put together in less than 15 minutes. 

In these lunch preps I try to include a variety of colors as well as a good balance of the essential food groups so that my kids are getting exposure to different foods in a fun and exciting way!

Ingredients 

  • 2 cups buttermilk pancake and waffle mix
  • 2 tsp dried oregano
  • 1 cup milk
  • 2 larger eggs
  • 1 cup shredded mozzarella cheese, divided
  • ½ cup mini pepperonis, diced, plus extra for topping
  • ¼ cup green onion, diced, plus extra for serving
  • 1 cherry tomato, diced
  • 1 cup pizza sauce
  • fresh fruit, optional for complete lunchbox – I used strawberries and blueberries

Instructions 

  • In a large bowl, whisk together pancake mix, milk and eggs. Add in dried oregano and season with salt and pepper to taste. Stir in ½ cup mozzarella cheese, diced pepperoni, diced tomato, and green onions until well combined.
  • Heat a non-stick skillet or griddle over medium heat. Spray with cooking spray or melt butter in the skillet.
  • Pour 1/4 cup of the batter into the skillet and use the bottom of the cup to spread into a circle.
  • Cook until bubbles form on the surface of the pancake, then flip and cook for 1 more minute.
  • Spread a tablespoon of pizza sauce on the pancake, sprinkle with shredded mozzarella cheese and top with mini pepperonis. Turn the heat to low or completely off if too hot and cover with a lid, 30 seconds – 1 minute. Just until the cheese is slightly melted.
  • Remove from the skillet and serve with additional green onions, cheese and/or pizza sauce for dipping. Serve with fresh fruit for a complete lunchbox option.
