This recipe is a lifesaver on those hectic weeknights when time is short, but the hunger is real. It’s a crowd-pleaser that never fails to satisfy even the pickiest eaters in my household.

The combination of savory black bean, seasoned taco beef, creamy melted cheese, and the sweetness of roasted sweet potato chunks and fresh cherry tomatoes on a bed of crispy blue corn tortilla chips is simply irresistible.

To make this easy, delicious, and nutritious nachos recipe you’ll need a few ingredients that you can get at almost any grocery store or even online!

Here’s what we are working with:

  • ground beef
  • taco seasoning
  • onion
  • sweet peppers
  • black beans
  • cherry tomatoes
  • shredded cheese
  • sweet potato
  • blue corn tortilla chips

how to make black bean nachos with sweet potato

For the ground beef and sweet potato mixture

Preheat your oven to 400 degrees F and line a baking sheet with parchment paper. Place the diced sweet potato on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the oven for about 15-20 minutes, or until the sweet potato is tender and slightly caramelized.

Note: For quicker cooking time, simply place the diced sweet potato in a baking dish with 1 tablespoon of water into the microwave. Season with salt and pepper, cover and heat 5-6 minutes.

In a skillet over medium heat add olive oil, once hot add the onion and peppers. Cook for a few minutes, until vegetables are tender. Add the ground beef to the skillet and cook until browned. Stir in the taco seasoning until fully combined.

Add the cooked sweet potato chunks, cherry tomatoes, and black beans to the skillet; stir until well combined.

Arrange a layer of tortilla chips on a baking sheet. Spoon the ground beef and sweet potato mixture evenly over the chips, spreading it out to cover the chips.

Sprinkle the shredded cheese on top of the nachos.

Bake in the preheated oven for 8-12 minutes, or until the cheese is melted and bubbly.

Remove from the oven and let cool slightly before serving.

Garnish with your favorite toppings such as fresh salsa, avocado slices, sour cream, or chopped cilantro. ENJOY!

  • 1 lb ground beef
  • 1 tbsp olive oil

  • 1 cup sweet peppers (about 4-5 peppers, any color), diced
  • 1 packet taco seasoning, homemade or store-bought, about 3 tbsp
  • 1 can black beans, drained and rinsed
  • 1 cup cherry tomatoes, halved
  • 1 bag blue corn tortilla chips
  • 2 cups shredded monterey jack cheese
