Ingredients
4slices bacon, *Use bacon crumbles instead for less cooking time, optional
2tbspunsalted butter
1onion, diced
1cupcarrots, peeled and diced
3garlic cloves, minced
3russet potatoes, peeled and diced
2cupsham, diced
3cupschicken or vegetable broth
1cupcream, coconut cream or cashew cream for dairy-free option, see notes
1cupsweet corn kernels
2-3green onions, diced, optional for serving
Instructions
Heat a skillet over medium high heat. Add bacon and cook until brown and crispy. Transfer to a paper towel-lined plate; set aside.
In a large pot, melt the butter over medium-high heat. Add the onion, carrots, and garlic and sauté for 2-3 minutes until softened.
Add the potatoes, ham, and broth to the pot. Bring to a boil, the reduce heat to medium-low and simmer for 15-20 minutes or until potatoes are soft.
Add the cream and corn to the pot and allow it to cook for another 5 minutes until heated through.
Serve immediately, garnish with bacon and green onion, if desired.
