Ingredients
1lbchicken breasts , thin, boneless skinless
2tbspolive oil
1tspsmoked paprika
salt and pepper, to taste
¼cuphoney
3tbspdijon mustard
1tbspwhole grain mustard
3garlic cloves, minced
1lbgreen beans, fresh or frozen
1lbbaby potatoes, cut into small cubes
1lemon, cut into round slices, optional
Instructions
Preheat oven to 425 degrees F.
Pre-cook the potatoes: In a large pot of boiling water, cook cubed potatoes for 15 minutes.
While the potatoes cook, make the honey mustard sauce: In a small bowl, whisk together honey, mustard, garlic, and additional salt and pepper to taste.
In a medium bowl, toss the green beans and potatoes with olive oil, paprika, salt and pepper. Onto a prepared sheet pan, spread them in a single layer on around the sheet pan, leaving room in the center for the chicken.
Prepare the chicken: Brush the top and sides of each chicken breast with the honey mustard mixture and place in the middle of the veggie mix on the sheet pan. Place lemon slices under and on top of the chicken, optional.
Bake for 20-25 minutes, until the chicken is cooked through and the vegetables are tender.
