  • dijon mustard
  • whole grain mustard
  • garlic cloves
  • green beans, fresh or frozen
  • baby potatoes

  1. Preheat oven to 425 degrees F.
  2. In a medium bowl, toss the green beans and potatoes with olive oil, paprika, salt and pepper. Onto a prepared sheet pan, spread them in a single layer on around the sheet pan, leaving room in the center for the chicken.
  3. In a small bowl, whisk together honey, mustard, garlic, and additional salt and pepper to taste.
  4. Prepare the chicken; butterfly and pound chicken breasts into thin cutlets. Brush the top and sides of each chicken breast with the honey mustard mixture and place in the middle of the veggie mix on the sheet pan. Place lemon slices under and on top of the chicken, optional.
  5. Bake for 25 minutes, until the chicken is cooked through and the vegetables are tender.

  • 1 lb chicken breasts (about 2 large), butterflied and pounded thin

  • 3 tbsp dijon mustard
  • 1 tbsp whole grain mustard
  • 3 garlic cloves, minced
  • 1 lb green beans, fresh or frozen
  • 1 lb baby potatoes, cut into small cubes
  • 1 lemon, cut into round slices, optional

Instructions 

  • Preheat oven to 425 degrees F.
