why we love this sheet pan meal

What’s not to love about sheet pan meals? They’re quick, easy to make, and require minimal clean-up. In addition to the ease, you get a balanced meal with protein, carbohydrates, and vegetables. My kids absolutely love this honey mustard chicken dish. Best of all, I love how easy it is so prep ahead of time. This means I can simply pop into the oven when I get home from a busy day at work.

We love the versatility of this recipe. You can easily swap out the chicken for salmon, pork, or even cauliflower for a meatless option. The honey mustard glaze is both sweet and tangy making it the perfect flavor combo for so many tasty choices.

To complement the chicken, we’ve included cubed potatoes that roast to a crispy perfection in the oven. I’ve found that using baby potatoes works best for this recipe, but if you only have large potatoes, make sure to cut them into small chunks. This will ensure they cook evenly with the chicken. Additionally, you can place the potatoes in the microwave for 3-4 minutes to guarantee crispiness in the oven. Finally, we throw fresh green beans into this sheet pan sensation for color and to add a bit of nutrition to the meal.
