Ingredients
1pork butt (aka pork shoulder) roast, We use ButcherBox pork
Coat all sides with chipotle chili seasoning, smoked paprika, salt and pepper. Using your hands, with gloves, to make sure the seasonings are rubbed into the meat.
Pour in the tequila (be as generous as you wish!), drizzle over the honey and lime juice. Top with half of the cilantro.
Cook on low for 6-8 hours or high for 4 hours.
Using a fork, reach into the slow cooker and pull the pork apart.
Once the pork is shredded inside the crockpot, prepare the tacos.
Spoon the pork into warmed tortillas and top with the other half of cilantro and fresh lime slices. Serve with avocados, rice or side salad. I made a black bean and corn salad and topped with a creamy chipotle ranch dressing.
