Ingredients
4sweet potatoes
2tbspolive oil
1smallred onion, diced
1lbground chicken or turkey
1tspgarlic powder
2tspitalian seasoning
salt and pepper, to taste
1largehoney crisp apple, chopped
1cupdried cranberries
3handfulkale, chopped
½cuppepper jack cheese, shredded
green onions, chopped, for garnish
Instructions
Poke holes in the sweet potatoes with a fork, and then microwave for 10-15 minutes. (See notes for oven baked sweet potatoes)
Cook onion over medium heat with olive oil for 4-5 minutes, until soft and fragrant.
Add in ground chicken and spices; breaking apart and cooking until browned.
Mix in apples, dried cranberries, and chopped kale. Continue cooking about 10 more minutes.
Make a slit in the sweet potatoes and fill with the chicken and apple mixture. Sprinkle over pepper jack cheese and place under the broiler for 2-3 minutes, until cheese is melted. Garnish with green onions and serve.
Notes
For sweet potatoes in the oven: Preheat oven to 400 degrees. Poke holes in the sweet potatoes with a fork and wrap in tin foil. Bake for 1 hour.
