To make these easy and delicious stuffed sweet potatoes recipe you’ll need a few ingredients that you can get at almost any grocery store or even online!

  • sweet potatoes
  • olive oil
  • red onion
  • ground Italian chicken or pork sausage
  • garlic powder
  • Italian seasoning
  • salt and pepper
  • apples – our favorite is Honey Crisp for the extra sweetness
  • dried cranberries
  • kale
  • pepper jack cheese
  • green onions to garnish

how to make harvest stuffed sweet potatoes

  1. Poke holes in the sweet potatoes with a fork, and then microwave for 10-15 minutes.
  2. Cook onion over medium heat with olive oil for 4-5 minutes, until soft and fragrant.
  3. Add in ground chicken and spices; breaking apart and cooking until browned.
  4. Mix in apples, dried cranberries, and chopped kale. Continue cooking about 10 more minutes.
  5. Make a slit in the sweet potatoes and fill with the chicken and apple mixture. Sprinkle over pepper jack cheese and place under the broiler for 2-3 minutes, until cheese is melted. Garnish with green onions and serve.

Ingredients 

  • 4 sweet potatoes
  • 2 tbsp olive oil
  • 1 small red onion, diced
  • 1 lb ground chicken or turkey
  • 1 tsp garlic powder
  • 2 tsp italian seasoning
  • salt and pepper, to taste
  • 1 large honey crisp apple, chopped
  • 1 cup dried cranberries
  • 3 handful kale, chopped
  • ½ cup pepper jack cheese, shredded
  • green onions, chopped, for garnish

Instructions 

  • Poke holes in the sweet potatoes with a fork, and then microwave for 10-15 minutes. (See notes for oven baked sweet potatoes)
  • Cook onion over medium heat with olive oil for 4-5 minutes, until soft and fragrant.

Notes

  • For sweet potatoes in the oven: Preheat oven to 400 degrees. Poke holes in the sweet potatoes with a fork and wrap in tin foil. Bake for 1 hour.
