Ingredients for back to school waffle pencils

Here is what we are working with to make these fun and delicious waffle pencils:

  • GF pancake & waffle mix
  • peanut butter
  • strawberry
  • apple
  • melted dark chocolate chips, optional for writing “abc…”
  • heart food cutter, optional to make apple heart shapes

How to make back to school waffle pencils

  1. Prepare waffle mix according to package directions.
  2. Preheat waffle maker until hot and lightly spray with avocado oil. Place about 1/4 cup of the batter into the waffle maker using the back of a spoon to make sure entire surface is covered.
  3. Close the lid and let cook 3-4 minutes until golden brown. Use a fork to carefully lift the waffle onto a plate and set aside.
  4. Prepare cut-outs: cut the stem and tip off a strawberry and then cut in half to form two U shapes. Cut an apple slice in half, then cut into 2 triangular shapes to form the tips of the pencils. If using heart cut-outs, use the remaining apple slices to make them.
  5. Prepare the waffles; first cut in half down the center. Next, cut-off the rounded side of each waffle. Finally, trim off the top and bottom of each waffle; you should have two equal rectangles.
  6. To form the pencils, place a small amount of peanut butter on the bottom edge of each waffle and stick on the apple triangles. Attach a chocolate chip to the bottom with peanut butter to form the tip of the pencil. Add the strawberry rounds to the top of each waffle to form the pencil’s eraser.
  7. Serve with whipped cream, additional fruit and/or chocolate.

We sure hope you enjoy this fun and delicious back to school breakfast or snack option as much as our little tribe has time and time again. Please leave us a star review and comment if you make these back-to-school waffle pencils!
