To make this easy one-pot orzo chicken and veggies recipe, you’ll need a few ingredients that you can get at almost any grocery store or even online.

Here’s what we are working with:

  • rotisserie chicken
  • onion
  • garlic
  • frozen california medley mix (broccoli, cauliflower, carrots)
  • cream
  • chicken broth
  • cheddar cheese
  • orzo

how to make one-pot creamy chicken orzo with california medley vegetables

In a large pot, heat some olive oil over medium heat. Stir in the diced onion and minced garlic, and sauté until the onion is translucent.

Add the rotisserie chicken to the pot and cook for a few minutes to warm through. Add the California mix to the pot and mix well with the chicken. Season with salt and pepper to taste.

Pour in the chicken broth and cream, and bring the mixture to a gentle simmer.

Add the orzo to the pot and cook according to the package instructions until tender, stirring occasionally.

Once the orzo is cooked, stir in the shredded cheddar cheese until melted and the sauce is creamy. Season with salt and pepper to taste.
