I’ve officially decided that when it comes to weeknight meals, we have two options: one-skillet or crockpot meals. With full-time teaching and fall sports, we are so busy I don’t know what day it is half of the time. However, my desire to provide my family with high quality meals is always at the forefront of my mind and heart. It’s just a matter of the time is takes from pan to table. This one-skillet salmon recipe was a hit in our house.

Where can I find the best salmon?

How do I achieve that perfect salmon sear?

The art to the that crispy sear on salmon (without drying it out) is to first pat the salmon dry with a paper towel and then season it with salt and pepper. You want to bring a few tablespoons of olive oil to heat and then place the salmon skin side up for 4-5 minutes. For this recipe, we will be placing the salmon back into the skillet skin side down with the remaining ingredients to cook until done.

  • salmon fillets 
  • olive oil
  • salt and pepper
  • red onion
  • cherry tomatoes
  • garlic powder
  • chicken stock
  • full-fat coconut milk
  • fresh spinach
  • farro

How to make one skillet creamed spinach salmon with farro

  1. Pat salmon dry and season with salt, pepper, and olive oil on both sides. 
  2. Heat 2 tbsp olive oil over medium-high heat until hot. Cook the salmon, skin side up, until golden and crisp, about 4-5 minutes. Set aside covered on a plate.
  3. Add remaining olive oil to skillet and sauté onions and tomatoes, about 2 minutes. Season with garlic powder.
  4. Pour in chicken stock and heavy cream and bring to a simmer. Stir in spinach and farro. Mix well.
  5. When liquid comes to a simmer, reduce the heat and cover. Cook for 15-20 minutes, until farro is tender.
  6. Nestle in the salmon, skin-side down and continue to cook, covered for an additional 5 minutes.

Ingredients 

  • 4 tbsp olive oil, divided
  • 4 fillets salmon , I highly recommend ButcherBox Salmon
  • salt and pepper , to taste
  • 1 small red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 1 tsp garlic powder
  • 1 cup chicken stock
  • 1 cup canned full-fat coconut milk
  • 6 oz fresh spinach
  • 1 cup farro

Instructions
