As a busy mom and a teacher, I am always looking for creative and delicious ways to make my kids’ lunchboxes fun and exciting for them. And nothing can beat the classic comfort foods like the infamous fluffernutter sandwich! One bite of this goodness is a seriously blast from the past for me!

I love making my own homemade marshmallow fluff for this recipe because it adds a special taste of my childhood to my kids’ lunches. Also, this marshmallowy deliciousness is super easy to make and my kids say that it tastes better than the store-bought version. I consider that a home run in the lunchbox playbook!

This homemade fluff is the perfect way to add some extra sweetness to your child’s lunchbox, and it also makes a great dip for fruit or graham crackers. It stores well too! This homemade marshmallow fluff recipe can be stored in an airtight container and kept at room temperature for up to 6 weeks. However, we’ve never been able to make it last that long. Serious warning: this stuff will go fast!

To make our fluffernutter sandwiches even more fun, I like to use heart and star food cutters to create a little cut-out to add some festive sprinkles into the mix at the end. It’s a fun and easy way to serve a classic sandwich and jazz them up a little bit for a holiday. You can simply change the colors of the sprinkles or shapes of the cut-outs to match the celebration!

To make this fun and delicious fluffernutter sandwich with sprinkle cut-outs school lunchbox, you’ll need a few ingredients that you can get at almost any grocery store or even online!

This will make 4 lunchbox containers. I love these 2 compartment food containers that I found on Amazon!

Here’s what we are working with:

For the marshmallow fluff

  • egg whites
  • cream of tarter
  • granulated sugar
  • light corn syrup
  • water
  • vanilla extract, optional

for the fluffernutter sandwiches

  • whole wheat bread slices
  • peanut butter
  • marshmallow fluff
  • food cutters, optional
  • sprinkles, optional
  • fresh berries for complete lunchbox, optional

how to make a fluffernutter sandwich with sprinkle cut-outs lunchbox

  1. In a mixing bowl, place egg whites and cream of tarter; turn on your mixer to medium and whip the egg whites to soft peaks, about 3-4 minutes.
  2. In a medium saucepan, combine sugar, corn syrup, and water and cook over medium heat. Once the sugar is dissolved, remove from heat.
  3. Slowly pour the hot syrup into the mixing bowl with egg whites while beating on high until the mixture becomes thick and fluffy, about 6-8 minutes. Add-in the vanilla extract if using.
  4. Onto a slice of bread, use a food-cutter to cut-out desired shape if using. Generously spread peanut butter and then a layer of marshmallow fluff.
  5. Spread peanut butter and marshmallow fluff onto another slice of bread and then seal the two slices together so that the shape cut-out is on top. Place sprinkles inside the shape.
  6. Place sandwich into lunchbox and serve with fresh berries, optional.

why prep lunches for school?

To make meal planning more consistent and practical in my house, I aim to include four school lunch preps for my two kids in our weekly meal prep rotation. This helps us save money. Additionally, we can ensure that two days of the week, the kids have well balanced meals. Moreover, these lunchboxes are fun and festive, yet simple enough to put together in less than 15 minutes.
