With the close of the summer, I had to go out with a bang! We have had an over abundance of peaches and with family in town, we were hosting a bourbon tasting. What a better way to fully indulge in the experience than a low-carb recipe that combines the best of both worlds?! (In walks keto bourbon peach cobbler muffins).
Are peaches keto-friendly?
This answer is two-fold. Carbs in peaches are too high in the average serving to enjoy regularly on a keto diet. Fortunately, by moderating your portion size and pairing peaches with other low carb foods, you can fit this tasty fruit into a healthy keto diet. Everything in moderation is always my go to motto. So yes, peaches are keto-friendly fruits, but within the right balance to be enjoyed. One small yellow peach has about 12 grams of carbs, 2 grams of fiber, and 11 grams of sugar. This recipe calls for 3 small peaches that we will be dividing between 12 single muffins.
Ingredients for sugar-free bourbon peach cobbler muffins
To make this easy sugar-free bourbon peach cobbler muffins recipe, you need a few ingredients for the fruit layer and then some for the keto muffins. Here’s what we are working with:
For the sugar-free bourbon peach fruit layer
- Peach slices – peel, core fresh peaches, and cut into 1 inches slices. For an easy way to peel peaches simply bring a pot of water to a boil and add peaches to the boiling water for 10-20 seconds. Remove the peaches with a slotted spoon once you see the skin begin to break, and immediately immerse the peaches in ice water. Let soak until cool to the touch and peel.
- Erythritol – or any keto sweetener you like.
- Psyllium husk or xanthan gum – to create a jam-like texture when the fruit bakes, avoiding a runny cobbler.
- Bourbon – This recipe calls for 1/4 cup of this goodness. You can use more, less or none depending on your taste preference.
For the sugar-free muffin/dough mixture
- Almond flour – use ultra-fine almond flour for a buttery golden muffin. Almond meal works as well, but it is darker in color.
- Coconut flour – you can’t replace coconut flour with the same amount of almond flour. Coconut flour’s properties are different. It’s a very high fiber flour, which gives the muffin its texture while avoiding a wet, runny cobbler. You want to use a combo of almond flour and coconut flour in this recipe.
- Egg – or flax egg: mix one tablespoon ground flaxseed meal with three tablespoons of water.
- Melted coconut oil or butter – I used coconut oil to make the muffin crispier on top and generally love the flavor of coconut. Still, butter tastes amazing as well if you love buttery, softer, fluffier muffins.
- Heavy cream or almond milk – Heavy cream is a perfect fit on a ketogenic diet. Almond milk works great in this too!
- Erythritol
- Cinnamon
- Vanilla extract
- Baking powder
- Salt

Ingredients
For the peach filling
- 3 small peaches, cored, peeled and sliced
- ¼ cup bourbon
- 2 tablespoons Erythritol
- ½ tablespoons Whole Psyllium Husk
Instructions
- Preheat your oven to 350 degrees Fahrenheit and prepare a large muffin tin with 12 muffin cups.
- In a large mixing bowl, combine the fresh peach slices with bourbon, erythritol and psyllium husk.
- In another mixing bowl, whisk together the almond flour, coconut flour, erythritol, salt, cinnamon and baking powder.
- Stir in beaten egg, coconut oil, and heavy cream until it forms a thick creamy batter.
- In each muffin cup, place about 2-3 tablespoons batter on the bottom then the fresh peach mixture and top with batter. Repeat until all muffin cups are filled.
- Bake at 350 degrees Fahrenheit for about 20-25 minutes until golden brown and a toothpick inserted into one of the muffins comes out clean.
