I wanted to recreate this classic southern dessert in a healthier and dairy-free version that I can enjoy guilt-free and share with my family. With a few simple swaps and healthier ingredients, this recipe captures the essence of traditional banana pudding while being refined sugar-free and dairy-free.

Here’s what we are working with:
- ripe bananas
- full-fat coconut milk
- vanilla bean cashew milk yogurt
- sugar-free maple syrup
- vanilla almond butter granola
how to make healthy banana pudding
- In a mixing bowl, combine coconut milk, vanilla bean cashew milk yogurt, and sugar-free maple syrup. Mix until smooth and creamy.
- Layer sliced bananas at the bottom of individual serving jars or a large dish.
- Pour a generous layer of the coconut milk mixture over the bananas.
- Sprinkle granola on top.
- Repeat layers until the jars or dish are filled, ending with a sprinkle of granola on top.
- Chill in the refrigerator for at least one hour to allow the flavors to meld and the pudding to set; Serve with dairy-free whipped cream if desired.
