Let me welcome you to a super quick recipe for white chicken chili that makes for an easy and hearty cold-weather meal that won’t stress you out. With this white chicken chili recipe, you will get just the right amount of heat from chipotle peppers with an unbelievable flavor punch from the chili broth bomb and Chili Magic Starter.

Ingredients for Broth Bomb Chipotle White Chicken Chili

To make this easy broth bomb chipotle white chicken chili, you’ll need a few ingredients that you can get at almost any grocery store or even online.

Here’s what we are working with:

How to Make Broth Bomb Chipotle White Chicken

  1. Prep chicken and veggies; shred or cut rotisserie chicken into cubes, about 3 cups. Finely chop onion and 1-2 chipotle peppers in adobo sauce.
  2. In a large pot heat 2 tablespoons olive oil; sauté onion, chipotle peppers and garlic over medium heat, 2-3 minutes.
  3. Add Chili Magic Beans, cooked chicken and 4 cups chicken broth; stir well to combine and simmer gently on low for 15-20 minutes (to keep the chicken tender, do not let the pot boil).
  4. Add in the Chili Broth Bomb and stir frequently until it dissolves. Remove the pot from the heat and let it cool for 5 minutes.
  5. Stir in shredded cheese, mixing in one cup at a time.
  6. Bring pot back to a simmer, 10-15 minutes, adding in water for thinning the chili to your desired consistency, if needed.
  7. Serve chili in bowls and garnish with cilantro, sour cream, avocado and/or extra cheese.

What if I don’t have a Chili Broth Bomb?

No chili broth bomb, no problems! We’ve got you covered. You can either use a packet of White Chicken Chili Seasoning Mix or simply make your own by combining the following spices together:

  • 1/2 teaspoon salt
  • 1/2 teaspoon pepper
  • 1 teaspoon chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon oregano
  • 1 teaspoon sugar or sugar substitute (1:1 equivalent)1 teaspoon
  • 2 teaspoons cumin

The above combination of spices will give you the best, copycat seasoning mix for any great chili recipe. I’m just always here for the broth bomb explosions!
