Luckily, I have this incredible and super easy recipe for creamy (no dairy!) tuscan chicken in my back pocket at all times!

And the best part? While it may look and sound complicated, it’s actually incredibly easy to make.

Believe me when I say that this creamy chicken tuscan with no dairy recipe is sure to become a weeknight staple in your household. Not only is it a delicious one pan meal, but it’s also a great way to enjoy a comforting meal without any of the dairy-related guilt.

What is Tuscan Chicken?

I’ll admit it. I did a little research on understanding exactly what and where this popular dish that I’ve been making for so long originated. Tuscan style cuisine is a hearty Italian-inspired dish traditionally made with sun-dried tomatoes, spinach, and creamy sauces like alfredo or parmesan. The dish is a beloved one for its satisfying combination of flavors and textures, and has become a staple for families looking to explore new cuisines or seek comfort in wholesome, robust dishes.

Our family seriously cannot get enough of a tuscan style dish because we are talking healthy and delicious at the same time. Is there a better combo? Many variations of this yummy dish exist, however this recipe that uses coconut milk as an alternative to cream is by far our favorite.

Ingredients

To make this creamy dairy-free tuscan chicken recipe, you’ll need a few ingredients that you can get at almost any grocery store or even online.

Here’s what we are working with:

  • chicken breasts
  • olive oil
  • smoked paprika
  • onion
  • garlic
  • Italian seasoning
  • broth
  • coconut milk
  • sun-dried tomatoes
  • spinach

How to make dairy-free tuscan chicken

  1. Heat olive oil in a large skillet over medium heat.
  2. Season chicken breasts with salt, pepper, and smoked paprika, then add to the skillet and cook until golden on both sides, about 4-5 minutes per side. Remove chicken from skillet and set aside.
  3. Add diced onion to the same skillet and cook until softened and slightly translucent.
  4. Add minced garlic, thyme and oregano and cook for another minute.
  5. Add chicken broth to the skillet to deglaze the pan, scraping up the brown bits from the bottom of the skillet.
  6. Add chopped sun-dried tomatoes and coconut milk and stir to combine. Cook for another 2-3 minutes.
  7. Add the spinach to the skillet and cook until it wilts.
  8. Return the chicken to the skillet and spoon the sauce over the chicken. Serve immediately.

  • 1 pound chicken breasts, butterflied and pounded thin
  • 1 tbsp olive oil
  • 1 tsp smoked paprika
  • 1 small onion, diced
  • 3 garlic cloves, minced
  • 1 tsp dried thyme
  • 1 tsp dried oregano
  • salt and pepper, to taste
  • ½ cup broth
  • ½ cup coconut milk, full fat cream
  • ½ cup sun-fried tomatoes, chopped
  • 2 cups baby spinach

Instructions
