I’ll be the first to admit that one of my favorite parts about attending my kids’ sports events is making my way over to the concession stand for a walking taco. What’s not to love? Crunchy, satisfying and loaded with all the goods tacos has to offer–count me in.

My kids often request walking tacos for their school lunches. In an effort to switch things up a bit we made our beloved meal, but with fritos when we were feeding a large crowd for a football game. I don’t think I want my walking tacos any other way now.

This frito pie recipe is a win win for my family on those crazy busy weeknights. It is also a super fun meal to serve at parties so you can spend less time in the kitchen and more with your guests. We love the simple toppings we suggest in the recipe, but you can go as nuts as you like. It’s really all about the ease and deliciousness here!

To make this easy and delicious frito pie recipe you’ll need a few ingredients that you can get at almost any grocery store or even online!

Here’s what we are working with:

  • olive oil
  • onion
  • red bell pepper
  • taco seasoning
  • ground beef
  • fritos – we love fritos scoops which are perfect for dipping.
  • Spanish Style Ready Rice
  • shredded iceberg lettuce
  • salsa
  • black olives
  • shredded Monterey Jack cheese
  • sour cream

how to make frito pie

Heat oil in a large skillet over medium-high heat. Saute onion and pepper for 5 minutes or until softened. Add taco seasoning, salt and pepper; cook for 1 minute. Add ground beef and cook until browned.

Into a large baking dish place the fritos and cover with the ground beef mixture.

Add the cooked Ready Rice, then the shredded lettuce, salsa, and black olives.

Top with the shredded cheese and sour cream. Serve immediately.

Absolutely! This walking tacos with fritos recipe is one of my favorite meals to prep. It is a quick and easy meal that comes together fast which means more time for you to enjoy your weekend without a whole lot of time spent meal prepping.

My kids also love when I pack walking tacos with fritos for their lunchboxes. When I prep this meal for them, I usually serve the fritos on the side so they do not become soggy.

Simply divide this recipe into 4 meal prep containers. You will be set for the week with this meal. It’s a fantastic option for a complete, quick, and satisfying meal prep.

Ingredients 

  • 2 tbsp olive oil
  • 1 small onion, finely diced
  • 1 red bell pepper, finely diced
  • 2 tbsp taco seasoning
  • 1 pound ground beef
  • 1 large bag fritos
  • 1 pouch (8.8 oz) Spanish Style Ready Rice
  • 1 cup shredded iceberg lettuce
  • 1 cup salsa
  • 1 can black olives, sliced
  • 1 cup shredded Monterey Jack cheese
  • ½ cup sour cream

Instructions
