Enchiladas Suizas – Creamy Chicken Enchiladas

Enchiladas Suizas are cheesy shredded chicken enchiladas topped with a creamy tomatillo sauce. This recipe is made using shredded rotisserie chicken and topped with the easiest, creamiest salsa verde sauce for a delicious weeknight meal option that comes together quickly.

Enchiladas suizas are my absolute favorite. Firstly, they are the creamiest of all the enchiladas. Chicken enchiladas come in so many forms – one of the more popular ones are enchiladas verdes which are made with a green salsa.

What are enchiladas suizas?

Enchiladas suizas can be translated into Swiss style enchiladas which are smothered in a rich creamy sauce AND have the verde salsa intertwined so to me they are just the most fabulous in the world of enchiladas!

Fun fact: when my best friend and I were living abroad in Mexico, our host mom taught us how to make these. We had ordered enchiladas suizas at a restaurant and it was love at first sight; we needed the details. So we’ve been perfecting this recipe for about 16 years now and I would say that I feel pretty confident when it comes to these enchiladas.

This is also the first recipe I made for my husband. He’s still asking for this recipe so there has to be something to it, right!?

How do you make authentic enchiladas suizas?

The key to making amazing enchiladas is to get the salsa and/or sauce right.

So if you want to make killer chicken enchiladas you first have to make a killer salsa verde. For this recipe and for the sake of time, I highly recommend Frontera Tomatillo Salsa. Shredded chicken is then mixed with the salsa, onion, garlic, cheese and rolled in tortillas. If you want to convert a classic enchiladas verdes recipe to suizas, you just add in the cream sauce. The cream sauce is what takes these chicken enchiladas to next level and the reason why we love enchiladas suizas so much!

Should I fry the tortillas before making enchiladas?

When it comes to the tortillas, it is completely optional whether or not you pre-fry them before rolling them with all this cheesy goodness.

I recommend doing so – just for that added level of crunch! We prefer almond flour tortillas for our creamy chicken enchiladas suizas. They just give it the right level of flavor and texture. To pre-fry your tortillas, simply heat-up 2 tablespoons olive oil and cook each tortillas for 10-15 seconds on each side.

How to make enchiladas suizas

  1. Preheat oven to 350 degrees
  2. In a large bowl combine shredded chicken with the salsa verde, chopped onion, and minced garlic.
  3. Whisk together broth, cream, sour cream, green chilies, and 2 tablespoons cilantro in a saucepan over medium heat until well combined. Season with salt and pepper to taste.
  4. Place a layer of the cream sauce in the bottom of a baking dish to coat. Assemble your tortillas by placing 2 tablespoons of cheese in the center of each tortilla and top with 1/3 cup of the chicken mixture. Fold the tortilla over the filling and roll to close.
  5. Pour the rest of the cream sauce over the enchiladas and top with remaining cheese.
  6. Bake for 25-30 minutes until bubbly. For extra crispiness, place under broiler for 2 minutes.
  7. Garnish with remaining cilantro and serve warm with additional salsa of choice.

Can I make enchiladas suizas low carb?

When I make this recipe, I always use Siete Almond Flour Tortillas. They are gluten and grain-free and have the most amazing fluffy texture. Siete Almond Flour Tortillas is free of non-keto ingredients like sugar, artificial sweetener, and refined oils, but it is higher in carbs so they are not ideal for a keto diet. However, this recipe would work well with another low carb tortilla or wrap when sticking to a keto meal plan.

What can I serve with enchiladas suizas?

Be creative with your toppings! You can add any kind of salsa, fresh cilantro or even a little spice with jalapeños. We serve ours with a fresh salsa and guacomole. You can choose to serve these simply with toppings and/or sauce or as is! Enchiladas suizas pair well with a side of rice, beans or for a more low carb option, riced cauliflower or a side salad works wonderfully. Enchiladas suizas are flexible; what works for you, works for them as well!

Can I meal prep creamy chicken enchiladas suizas?

Yes! These creamy chicken enchiladas make an easy and super delicious meal prep. When I meal prepped this recipe, I made my chicken and salsa verde mixture in the crockpot for ease. These creamy chicken enchiladas verdes make great leftovers because they have time to soak up all the flavors in this recipe.
